Lime, Mango, and Nectarine Smoothie

Yes, folks, I am cheating a little here. I am taking care of three letters (”L”, “M”, and “N”) with one simple recipe, a Lime, Mango and Nectarine Smoothie…I’m doing this to accommodate my Daring Kitchen schedule; hope you don’t mind.

Considering how smoothie-crazy I was a few months ago, it’s actually been a little while since I made one that was truly worth sharing; this is a sweet yet tangy healthy smoothie recipe that is worth it.

Lime, Mango, and Nectarine Smoothie
Serves 1-2; adapted from Vegetarian Cooking for Everyone by Deborah Madison

Ingredients:
2 nectarines (or peaches)
1 large mango
1 banana- optional
1/2- 1 1/2 cups Greek yogurt or kefir (depending on how fruity/yogurty you want your smoothie to be) or use vanilla hemp milk or coconut milk for a dairy-free smoothie; use fresh nut milk or coconut water for a raw foods smoothie
a few drops of vanilla extract- optional
3-6 ice cubes
fresh lime juice to taste (I used 1/2 lime; you could also you lemon juice)

Directions:
Peel and slice the fruit, then process in your blender with the other ingredients until smooth.
